Greg Baxtrom is an American chef and restaurant owner. He is best known as the chef-owner of several acclaimed restaurants, including Olmsted, Five Acres, Patti Ann’s, and Petite Patate. Born in Chicago, Illinois, Baxtrom graduated from Kendall College before gaining experience at renowned establishments such as Alinea, Blue Hill at Stone Barns, Per Se, and Lysverket in Norway. In 2016, Baxtrom opened Olmsted, a 50-seat restaurant that focuses on a seasonal and creative vegetable-forward menu, showcasing produce from its backyard garden and local farmers. Olmsted has received numerous accolades, including being named one of Esquire's Best New Restaurants in America and Food & Wine's 2017 Restaurant of the Year.
