Pedro Miguel Schiaffino

Pedro Miguel Schiaffino is a Peruvian chef known for his dedication to showcasing the flavors and ingredients of the Amazon jungle and Amazonian cuisine. He is the owner of Malabar, a renowned restaurant in Lima, Peru, where he creates innovative dishes using ingredients like kushuru, algae, aguaje, giant snails, sacha culantro, turmeric, achiote, guinea pig, Andean corn beer, quinoa, and various indigenous seasonings. Schiaffino, also known as the 'jungle chef,' is highly regarded for his expertise and has been compared to acclaimed chef René Redzepi. In addition to Malabar, he serves as the executive chef aboard the M/V Aqua. Schiaffino received his culinary education from the Culinary Institute of America and gained valuable experience working in Italy under renowned chefs Nadia Santini and Piero Bertinotti.
