Tyson Cole
Tyson Cole (born September 3, 1970) is a chef and restaurateur based in Austin, Texas, USA. He began his culinary career as a dishwasher at a Japanese restaurant named Kyoto in Austin. Cole seized the opportunity to start making sushi when staff attrition occurred. He then apprenticed under Takehiko Fuse at Musashino Sushi Dokoro in Austin, where he learned the art of sushi-making and studied the Japanese language. Continuing his training at Bond Street in New York City, Cole honed his skills further. In May 2003, he opened Uchi, a successful sushi restaurant in Austin. In 2010, he opened his second restaurant, Uchiko, which means "offspring of Uchi."
